Each plate tells a story shaped by the coast, the sea, and the sun, grounded in memory, guided by intention.The Aegean herbs are wild, fragrant, and full of memory. Japanese technique brings precision, intuition, and grace.
The menu follows the seasons. It is subtle, sensual, and sincere. Aegean greens and roots, delicately aged fish, and the robata flame come together to create something new. Sardines with olive oil and ponzu, quince-glazed tuna belly, red prawn crudo, Ezine custard, and seabass touched with bergamot. Each course is a dialaogue between The Aegean and Japanese.
